how to make creamy pasta wih pesto

CREAMY PASTA WITH PESTO
You will need;
250 grams dry penne pasta
2 generous tablespoons of Pesto (you can buy ready-made in the supermarket, I use Leggo’s with basil)
2 cups sliced mushrooms
½ a capsicum
1 medium onion
5 florets of broccoli
1 dozen snow peas
1 large breast of chicken or as an alternative 2 rashers bacon
2 tablespoons cream or milk mixed with 1 teaspoon of cornflower
Method;
Boil water for pasta and cook pasta
Wash and chop vegies into small bite sized pieces
Slice chicken or bacon into small pieces
Heat fry pan and add 1 teaspoon olive oil
Add chicken or bacon, cook until brown. Add onion and mushrooms until soft then add pesto.
Stir and add all other vegies until cooked.
Drain pasta
Add pasta to chicken and vegies, mix well. You may like to add a little more pesto at this point but taste first. Remove from heat, stir in cream and serve.
