Potato and Leek Soup
you will need;
1 large leek
5 potatoes
4 cups stock (any will do but chicken tastes great)
1Tb butter or margarine
2 garlic cloves
cream or milk
pepper to taste
Cooking instuctions;
Heat stove top to a medium heat.
Chop 1 leek and 2 cloves garlic .
Place pan on stove and add butter, once melted add leek and garlic. Stir, do not let garlic or leek brown. The idea is to soften the leek , it should take about 10 minutes.
Whilst the leek is cooking peel and chop potatoes. Once leek is soft add potatoes and stock bring to boil and then allow to simmer. Potato should be ready in about 20 - 30 minutes.
Use a potato masher or blender to puree the soup. Add cream or milk and pepper to taste.
tip; if the soup is to runny you can use cornflower to thicken. Place 2 teaspoons of cornflower into a small amount of milk and mix, then add to soup and allow to boil.
